adventures in pickling...

i don't know what made us do it...maybe we were debating what pickle brand was the best but we decided to pickle our own pickles.  i follow enough blogs that i KNEW someone out there had experience so i bought some pickling "cukes" as they're called, a jar funnel, and we had everything else!
B loves all things hot so we're experimenting so he can make his own hotHotHOT pickles and i can have my dills.

SIKE!

y'all!!!!!!  i made pesto last night that went over so well i did a happy dance in my head.........
BROCCOLI PESTO!!!  so sneaky but sooooooooo good.  seriously, try.it. if you have the task of trying to get veggies into meals like i do, this is the EASIEST way.  i just had to double time it in the kitchen to get rid of the evidence while he was in the office :)  so sneaky.


Broccoli Pesto
2 cups of pesto
1 large broccoli (around 2 cups)

A couple of stems fresh basil or sage
1/2 lemon, juice
1/2 cup hazelnuts
2 cloves garlic
1/2 cup olive oil
2 tbsp water
salt & pepper

Throw all the ingredients in a blender or food processor. Pulse for about a minute. Taste it. Add more olive oil or water if it feels too dry, and salt & pepper according to taste.
as you know, i'm not a big measurer but i eyeballed this....and added maybe a tablespoon or premade pesto to hide the broccoli-ness a bit more. and i added cayenne pepper...just a pinch. i put it on pasta with chopped artichokes, tomatoes, roasted red peppers and shrimp. YUMMMM!          for real....try.it.

fabulous fourth

we had a great weekend...considering we both have been VERY busy with work (i was out of town one week, then B was the next) it was soooooooooo good!  a friend here and her husband have a boat so we went saturday to a dock and eat restaurant on tybee and then sunday went out all day to this little island beach and watched fireworks.  i love savannah a little bit more after that fun-ness!!!  unfortunately my brain was still rocking a day or two after but well worth it :)
side note....do you ever look over to your sig.other and think 'how did i get so lucky'????  i did that all weekend, i tell you what! not that i don't think this thought ever but sometimes we let life, work, laundry etc cloud our googley eyes so i'm here to say...embrace this movie moment and love it!!

next on the agenda....trip to charleston (fun) and maybe some more work trips for both of us (not fun).

lastly, i bought some rhubarb after eating at a restaurant in knoxville called Rouxbarb... it had the BEEEST rhubarb chutney and cheddar biscuits i could ever imagine. gawwwd, i'm just excited thinking about possibly recreating it. YUMMMMMMMMMM
